Maple Syrup!
Are you ready for maple-sugaring season?
In New England, late February and the entire month of March provides us with the perfect weather for the sweet treat of maple syrup. AND we want pure maple syrup on our pancakes, waffles, and French toast! The warm(er) days and the cold nights offer the best case scenario for sap collection. Maple-sugaring season has long been the first rite of spring. You’ll see maple trees tapped to collect their sap, either with the traditional silver buckets or with the sap runs which lead the sap to a large collection container (like the image below).
